A Seaside Classic Arrives at House of McNee – Salt Water Taffy

At House of McNee we are always looking for interesting sweets that bring a bit of nostalgia and fun to the sweet shop counter. Our newest arrival does exactly that – the famous Salt Water Taffy, a traditional American seaside treat that has been enjoyed for well over a century.

Salt water taffy first became popular in coastal towns in the United States during the late 1800s. Sweet shops along the boardwalks sold these colourful wrapped sweets to holidaymakers looking for a treat to enjoy while walking along the seaside. Over time it became one of the most recognisable classic American confectionery sweets.

What makes salt water taffy unique is the traditional method used to make it. The process begins by cooking together sugar, corn syrup and flavourings in traditional copper pans, where the mixture is slowly heated until it forms a thick syrup. Copper pans have long been used in confectionery making because they distribute heat evenly, helping the sugar cook consistently and develop the right texture.

Once the mixture cools slightly, it is pulled and stretched repeatedly, traditionally on large metal hooks or by hand. This pulling process incorporates tiny air bubbles into the mixture, which is what gives taffy its light, soft and chewy texture.

After the taffy has been pulled, it is rolled into long ropes, cut into small bite-sized pieces, and wrapped individually in the bright wrappers many people recognise. A small touch of salt is used in the recipe to balance the sweetness and enhance the flavour.

The result is a sweet that is soft, creamy and full of flavour, with a texture quite different from traditional boiled sweets.
